Announcing Dr. Holmes Retirement:

Dr. Jessie Holmes has been a part of WCJC for 20 years!  Everyone here is sad to say goodbye as she leaves us for retirement.  Below is a message from her to her patients.  Thank you Dr. Holmes for being a part of our WCJC family and for the loving care you gave during your career!

Dear patients,

I am saddened to have to announce that I have made the difficult decision to retire from practice due to medical reasons. It has been the greatest joy and blessing to have been a part of the Women’s Clinic of Johnson County and serve for the last 20 years as an obstetrician-gynecologist in our community. I will miss you all more than you could possibly imagine.

Thank you for the opportunity to have been your physician. It was the greatest honor.  And remember that I leave you in not only the best, but better hands with my partners and nurse practitioners who I know will take the absolute best care of you.

Dr. Healy’s Meal Planning Tips for Busy Families

Everyone is back in school and running to activities in the evenings!  In order to save my sanity and make sure we have a healthy meal on the table most nights of the week I try to stay organized with meal planning.  As my sister-in-law, who is a registered dietician at Children’s Mercy Hospital says, if you don’t know what’s for dinner, you are more likely to eat junk!  I aim for 20 minute meals on the weeknights, which is very do-able with some prep-work. Here is my step-by-step guide to meal planning (what works for me anyway).  

I make the week’s menu first.  I take into account what nights are busiest and plan easy meals those nights, then make the grocery list.  Wednesdays are busiest at our house so I never try to cook on Wednesdays, it’s leftover night.  I post the menu on a bulletin board in the kitchen so everyone knows the plan (this also keeps the “what’s for dinner” whining to a minimum). Lots of Saturdays I make casseroles or soups.  I like to triple the recipe (this takes surpisingly little extra time) and freeze 2 meals to have on hand for busy nights.  It is almost soup season!  A pot of soup from the freezer and grilled cheese on a chilly night is a very easy home-run meal around here!  On Sundays, I prep anything I can ahead of time (like slice the veggies, or make black beans in the slow cooker for later in the week).  

Lastly, I recruit help. The kids are capable of helping with prep work and my husband usually makes Thursday meals.  

On Fridays the kids take turns choosing take-out.  I hope that getting my kids involved in the meal planning, cooking, and cleaning helps them invest in their own health.  Bonus: they are almost independent enough that I don’t have to do any dishes-BIG win! 

 

Below is our dinner meal plan for the week:

Sunday- Vegetarian Enchilada Casserole

Monday- Spaghetti squash and meat sauce, Caesar salad

Tuesday- Lentil Curry and rice

Wednesday- Leftovers

Thursday- Grilled pork tenderloin, roast broccoli and cauliflower,  kale salad with roasted squash, apples and blue cheese

Friday- Takeout (Charlotte’s Turn)

Saturday- Freezer meals (Chicken Pot Pie)
